Overview

We are seeking a dynamic and passionate Lead Chef to elevate our culinary offerings and inspire our kitchen team.

Reporting to the Director of Food Services (Director) the Lead Cook is responsible for all aspects of preparing, cooking and serving meals in the dinning room as well as for the preparation of meals for catering and special events. The Cook ensures that the kitchen, food equipment and dinning area are kept in a clean and orderly fashion, that all health and safety requirements are met and that food and kitchen supplies are properly received and stored. With a goal of exceptional customer service, the Cook creates a pleasant and welcoming environment for all guests, engages with them and endeavors to meet their dietary requirements.

Working with the Director, the Lead Cook will assist in menu planning for regular meals and special events. In the absence of the Director, the Cook is also responsible for the supervision of kitchen staff and the ordering of kitchen food and supplies as required.

Responsibilities

Food Preparation

· Prepare, cut and wash all ingredients required for daily meals including washing, peeling, cutting, and seeding fruits and vegetables

· Butcher and dress animals, fowl, or shellfish, or cut and bone meat prior to cooking

· Prepare soups, dressings and toppings

· Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment

· Season and cook food according to recipes or personal judgment and experience

· Turn or stir foods to ensure even cooking

· Bake, roast, broil, and steam meats, fish, vegetables, and other foods

· Observe and test foods to determine that they are fully and properly cooked

· Regulate temperature of ovens, broilers, grills, and roasters

· As required prepare cold sandwiches for the sandwich bar

· As required prepare sandwiches, fruit and drinks for bagged lunches

Baking

· Bake breads, rolls, cakes, and pastries as required

· Prepare all ingredients required for any daily baking

· Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment

· Bake the items as required ensuring that they are fully and properly cooked

· Regulate temperature of ovens as required

Food Service

· Place food in serving trays and severing line in preparation for meal times ensuring that the serving line is appealing and that all necessary utensils are available

· Ensure that serving trays and food items are replenished as required

· Respond to dietary restrictions of guests

· As required operate omelet and sandwich stations preparing made to order omelets and sandwiches for the guests

· Ensure that all food stations and dispensers including sandwich and salad bars, coffee and beverage dispensers and condiments are replenished

· Ensure the serving area is kept clean and orderly throughout the meal period and that dishes and cutlery inventories are maintained

Food Safety and Cleaning

· Ensure that all regulatory, health and safety and College requirements regarding food handling, storage and preparation are met

· Ensure that all areas of the kitchen and dinning room are kept clean and meet all regulatory, health and safety and College requirements

Supervision/Administration

· As required, oversee, mentor and supervise kitchen staff including scheduling of shifts and assignment of duties and responsibilities

· As required, receive kitchen and food supplies ensuring that they are inventoried and properly stored

· Inform the Director of inventory levels for re-ordering or in the absence of the Director re-order the necessary supplies

· Other duties as assigned

Knowledge / Competencies

· Minimum five years of experience working in a commercial kitchen setting

· Combination of cooking certificate/diploma and related experience

· Maintenance of a valid food safety certificate

· Ability to work in a fast-paced environment

· Ability to multitask, prioritize, and manage time efficiently

· Physical endurance to stand, bend and move for entire shift and able to lift up to 30 pounds

· Self-motivated and self-directed

· Works well as part of a team and on individual tasks

· Can memorize recipes and menu plans

· Can work early mornings, nights, and weekends

· Excellent customer service focus

· Able to read, write and communicate in English

Pay: $19.53-$37.26 per hour
