Simply because I need to find a job that suits what I want to pursue in life. If I were well off enough to retire, and never really 'need' to work, I'd probably still work here because I just love the atmosphere and the people.

Varies. Kitchen shifts start at 8am and can run past 1am on Fridays and Saturdays. Front of house generally start around 10am and are usually out by midnight even on weekends. Shifts can be short 3 hour shifts, splits, opens, mids, all-days, or closes. They usually try not to schedule anyone for more than 6 hours a day. Front of house is cut when it's slow whereas Kitchen isn't as fully staffed so cuts before the scheduled end of your shift aren't as common.

I would hire someone to specifically be the bartender, instead of having one of the servers bartend and waitress at the same time.
