Professional management, professional co workers
Focus on putting together a really good, fair and supportive management team that treats all staff equally. Allow the staff to clock in when it's their start time, regardless if they have a table or not. Provide staff with a free meal if they have to come in just to be sent back home. Provide at least a 50% discount off food for staff. Provide more than 30 mins after being cut to complete side duties and cash out gusts etc.
A higher budget for labor. That would lead to more time to do a good job, and better product and happier staff.
